This meal is the perfect Father's Day gift

Father’s Day this year is on Sunday, June 19, one week from today.  The holiday in the United States has been celebrated for more than 100 years. It's an event celebrated in many countries around the world, although at different times of the year.

Come help celebrate Father’s Day with this delicious French toast recipe.  This is a recipe dad will love.

Stuffed French toast is two pieces of French toast that are stuffed with bananas, fresh strawberries and raspberries or other fruit.  It is usually topped with butter, maple syrup and confectioner's sugar.

If you want to get extra fancy, some chefs serve it with a large scoop of vanilla or chocolate ice cream, whip cream and a side of bacon. The sky is the limit with toppings!! Instead of syrup, you can use fresh blueberry puree. I didn't have any need for the syrup; the stuffing was perfect on its own with confectioner's sugar.

Ingredients

  • 4 slices challah bread, or bread of your choice
  • 1 tablespoon butter
  • 2 eggs
  • 1 cup milk
  • 1/2 cup sugar (batter)
  • ¼ cup sugar (filling)
  • 1 teaspoon ground cinnamon
  • 2 teaspoon pure vanilla extracts (1 for batter and 1 for filling).
  • 1 tablespoon unsalted butter
  • 1 1/2 cups cream cheese
  • 1/4 cup dark chocolate chips (I used milk chocolate)
  • 1/2 cup medium-diced banana
  • 1/4 cup walnuts or pecans
  • 1/8 cup orange juice
  • 1/2 cup whip cream, optional
  • Maple syrup, optional
  • Confectioner's sugar for sprinkling, optional

Preparation

Preheat oven to 350 degrees F.

In a large shallow bowl, whisk together the eggs, milk, sugar, cinnamon and vanilla. Slice the challah in 3/4-inch thick slices. Dredge the bread in the mixture.

For the filling, fold cream cheese, chocolate chips, bananas, nuts, orange juice, sugar and vanilla all together in a bowl until mixed well, but not completely smooth.

Heat butter in a large sauté pan over medium heat. Add the soaked bread and cook for approximately 2-3 minutes on each side, until golden brown. Remove from pan and let cool.  Divide filling between 2 pieces of the bread, top with the remaining 2 pieces of bread. 

Transfer French toast to oven and bake for approximately 8 minutes.  Cut each French toast in half and serve. 

Makes 2 servings, 1 sandwich each.
